Cilantro-Lime Cucumber Salad
Slightly adapted from The Food Charlatan, this is one of my new favorite sides! This is very flavorful and super fresh. You eat it for the taste, but you feel great after! I substituted Serrano peppers for the jalapeno. I let it marinate in the fridge for about 2 hours before serving. The very small amount of leftovers we had, tasted better with time. I used them on top of lettuce with a little bit of blue cheese, walnuts, and leftover baked chicken for lunch. The marinade was a decent salad dressing. I’d also like to try this marinade with slightly cooked zucchini topped with sesame seeds. Also pictured is the Sesame Ginger Salmon.
