Black Bean and Quinoa Enchilada Bake
Slightly adapted from Two Peas and Their Pod, I substituted Serrano peppers for the jalapenos as well as Organic Jack cheese for the Mexican cheese. This was delicious and versatile! I would leave out the cheese next time, as this dish is already very flavorful and doesn’t need the cheese! I packed our lunches with a container of undressed lettuce and a separate container of this. We’d heat it up and add it to the lettuce for a delicious salad. We also made Breakfast Enchilada Bites from this bake!
